Moroccan Beet Salad – Awesome Side Dish or Addition To Your Salad

Yield: 4 servings

Ingredients:

  • 4 Beets
  • 1 Yellow or Vidalia Onion
  • 1/4 c chopped Italian Parsley
  • 2 Tbsps Extra Virgin Olive Oil
  • 1 Tbsp Red-wine vinegar
  • Kosher/Sea salt and black pepper to taste

Method:

  1. Boil the beets until tender.
  2. Rinse and remove skin.
  3. Cut beets in half, and then slice 1/4 in thick. Thinly slice the onion.
  4. Add remaining ingredients and thoroughly mix together in a bowl.
